Marrow Chutney recipe

This chutney could not be simpler to make - basically, you put everything into a pan and simmer until thickened. Use a glut of marrows or courgettes to make this chutney - just make sure to remove the seeds if there are too many of them.


  • 1kg marrows
  • 1 apple
  • 1 onion
  • 1 green pepper
  • 1 garlic clove
  • 250ml white wine vinegar
  • 250g brown sugar
  • 1 tbsp. English mustard
  • Good pinch each salt and chilli flakes


  1. Peel and chop the marrows. Peel, core and dice the apple. Finely chop the onion and the garlic clove. Slice the pepper in half and remove the seeds and pith then finely dice.

  2. Place the marrows, apple, onion, green pepper, garlic clove, vinegar, sugar, mustard, salt and chilli flakes.

  3. Bring everything to the boil, then reduce to a simmer and cook for up to an hour or more until thick and sticky. Cool and then spoon into sterilised jars.

Add a chilli or a red pepper if you want an extra pop of colour. This recipe makes 2 450g jars of chutney.
